The Finca Amigos farm in Colombia is located at an elevation of 1,741–1,950 meters above sea level. It covers an area of 16 hectares, 12 of which are coffee plantations, and serves as Cafexport’s experimental variety farm. Varieties grown on the farm include Java, Typica, Laurina, Rume Sudan, Tabi, and Geisha. The farm maintains 4 hectares of forest to protect the natural environment. In addition, 650 native trees and plants have been planted.
My idea is that the coffee featured here should serve as a sort of bridge between basic espresso and filter coffee. This washed-processed Typica immediately stood out from the rest during the tasting. With its clean profile and refined character, there was no question about it. Later, when brewed as an espresso, its aroma reminds me of a freshly baked cookie, with a hint of spice. On the palate, it’s very smooth and sweet, yet not overly chocolatey—it has more of a yogurt-like quality. I think it’s best as an espresso, but it’s also quite pleasant as a pour-over.
